I've always been a big fan of bread(add that line to the list of things I never thought I'd write), but I don't buy it much because I try to stay on the healthy side. I decided recently, though, that I'd like to get back into the habit of having a sandwich for lunch. I went to the supermarket expecting to leave with some kind of rye bread, but walked out with this:
This is vegetable bread.
I was skeptical when I first read the label. A lot of times companies will boast about how many fruits and vegetables are in their product, but then add a lot of sugar and salt to make the product more "appealing" to the mass-market. I was pleasantly surprised when I read the nutritional information and found that this bread has surprisingly few additives, hardly any salt, and no added sugar. And when they say "34% Vegetables", they aren't lying.
White beans, carrots, chickpeas, and beetroot, rye and wheat flours, rapeseed oil, yeast, and two things I don't know how to translate - but nothing fake or weird.
Nine grams of protein, six grams of fiber, and only 196 calories for two slices as a sandwich bun? That's impressive. Since my usual sandwich has gouda or emmental cheese, turkey, spinach, and Finnish mustard, I'm looking at a lunch that's under 300 calories and full of nutrients.

Though my particular sandwich of choice isn't vegan or vegetarian, the bread itself is vegan, and I'd be interested in experimenting with vegan fillings.
